De l\u2019avis des gastronomes du monde entier, il est <strong>l\u2019un des champignons les plus savoureux<\/strong>. C\u2019est notamment ce champignon qui offre l\u2019inimitable Umami (la 5\u00e8me saveur) aux plats asiatiques les plus raffin\u00e9s. Mais attention, le shimeji se m\u00e9rite : avant de pouvoir le d\u00e9guster dans vos bouillons ou saut\u00e9s favoris, il faudra en <strong>r\u00e9ussir la culture<\/strong>. Quand on \u00e9voque ce champignon, le pluriel est de mise car <strong>les vari\u00e9t\u00e9s, sauvages ou de culture, sont nombreuses<\/strong> : hon-shimeji, buna-shimeji, bunapi-shimeji\u2026 Ce sont autant de formes et de couleurs, du blanc au marron en passant par le violet, qu\u2019arborent ces champignons japonais.<\/p>\n\n\n\n<p>En r\u00e9alit\u00e9, le terme Shimeji englobe plusieurs esp\u00e8ces de champignons, les <strong>Lyophyllum <\/strong>et les <strong>Tricolomes<\/strong>. Certaines font m\u00eame l\u2019objet de brevets japonais d\u00e9pos\u00e9s ! D\u2019un point de vue gastronomique, c\u2019est le <strong>Hon-Shimeji <\/strong>(le \u201cVrai Shimeji\u201d) qui se classe <strong>en t\u00eate des favoris pl\u00e9biscit\u00e9s<\/strong> par les amateurs du monde entier. Pour ce qui concerne l\u2019humidit\u00e9 et la temp\u00e9rature, c\u2019est simple : <strong>leurs courbes doivent se croiser<\/strong>. Baissez progressivement la temp\u00e9rature jusqu\u2019\u00e0 environ 13-15\u00b0c et augmentez l\u2019humidit\u00e9 jusqu\u2019\u00e0 90%.<\/p>\n\n\n\n<p>Pour le <strong>substrat <\/strong>(\ud83c\udf3b), l\u00e0 encore les avis sont unanimes : c\u2019est <strong>la partie la plus difficile \u00e0 r\u00e9aliser<\/strong>. C\u2019est une v\u00e9ritable recette de cuisine qu\u2019il faudra suivre \u00e0 la lettre pour r\u00e9aliser votre propre substrat. Vous pouvez \u00e9galement acheter des substrats pr\u00eats \u00e0 l\u2019emploi. L\u2019important est de nourrir les pousses avec <strong>une dose suffisante de sciure de bois<\/strong>. En effet, n\u2019oubliez pas qu\u2019il s\u2019agit d\u2019un <strong>v\u00e9g\u00e9tal mycorhizien<\/strong> (\ud83c\udf3b) . L\u2019ajout de bois lui rappellera son environnement naturel ! Vous pouvez aussi r\u00e9aliser l\u2019ajout de son de bl\u00e9 ou de riz. <strong>N\u2019h\u00e9sitez pas tester les effets positifs ou n\u00e9gatifs <\/strong>de chaque ajout sur votre vari\u00e9t\u00e9 favorite.
